    Get the most juice out of lemons. Fresh lemon juice is much more tasty than the kind that comes out of a bottle, but it is sometimes surprising how little juice you can get out of a lemon. Heat the lemon in a microwave for 20 seconds on high power. Then, roll the lemon on your cutting board using as much pressure as possible. This way, you will get about twice the amount of juice out of the lemon, and your dish will be much more flavorful!

    You should not boil pasta in water that has oil in it. When you add oil to the water that you are boiling your pasta in it keeps the sauce from sticking to the pasta. By leaving the oil out you can toss your pasta in the sauce and it will cling to it.

    Longer cooking times and techniques, like boiling, destroys healthful nutrients in veggies. In order to retain their most important attributes, opt for steamed, sauteed or even raw vegetables.

    Vegetables should be cooked rapidly to obtain peak results. Vegetables which are cooked slowly can lose their taste and valuable nutrients. These quick cooking techniques will produce generally, healthier vegetable sides. You should only cook them just as long as it takes for them to be done.

     

    Cooking can be a joy if you invest in a good, sizable cutting board able to handle all of your cutting and chopping needs. If a butcher block table is out of the budget, look for a durable bamboo or sturdy maple for the job. A cutting board with a recessed groove surrounding the cutting surface is handy to catch juices from carving meats and makes clean up easy. If you will be using a cutting board on a smooth surface, look for one with rubber feet to avoid slipping. Maintain your cutting board with food-grade mineral oil (vegetable and olive oils can turn rancid) and make sure that you properly clean, and more importantly, dry your cutting board after each use to prevent warping.

    To discover when oil is really hot enough and ready for the food, look to its' surface. If it is no longer completely smooth and appears to be shimmering it is hot enough. When oil is allowed to over-heat it actually starts breaking down and releasing unpleasant compounds and will begin to smoke, so know when to say when!

    Fresh herbs can add a great deal to most recipes. Herbs can be tricky to handle, though, because they need to be chopped so finely. Sprinkling salt over the cutting board before chopping herbs can cut down on mess. The salt encourages herbs to stick to the board instead of flying off.

    Sometimes it can seem like a good idea to pile on all of your ingredients into the pan to save you time from having to cook them all separately. However, this can only prolong the cooking process since most foods need room to breathe in the pan to cook properly while soaking up the spices. Take the extra bit of time to cook them spaced out properly in the pan and you'll have a better tasting dish.

    To have a meal ready when you get home from work use a slow cooker or crock pot. Some meals come prepackaged. All you have to do is pour it into the crock pot, maybe add some water and set the heat. If you like making your own meals you can prepare ingredients the night before. After you've prepared the ingredients put them in the fridge. Add everything to the crock pot in the morning before you go to work.

    The best part of cooking is that you can eat your mistakes. Don't be scared about trying something new. Even Julia Childs and Wolfgang Puck have made complete failures of dishes at one point or another.
